Sottimano Barbaresco Cotta 2020 750 ML

Rino Sottimano purchased the estate in the 60’s in Neive’s cru Cott , in Piedmont, and a parcel of surrounding vineyards. With hard and passionate work, today the family winery produces five ‘crus’ of Barbaresco, among other wines, expressing the surrounding terroirs and traditions. The estate is organic so the dedication to the territory is essential: use of natural products in the vineyards to fight diseases also strengthen the grapes skin. Copper and sulfur are less and less used. Practices of green manure ‘good diet’ for the vines help them growing healthy but not too fast. The winemaking process starts with a selection of grapes in the vineyard and at the cellar door. It follows gentle pressing and long maceration on the skin with indigenous yeasts. Malolactic fermentation occurs in high quality French oak barrels of which 10% are new before the wine is aged for 18-20 months and another year in bottle before release. Wines are not filtered nor fined
