Roshambo’s winning strategy for pleasurable Pinot Noir is to employ the best of ancient and modern techniques; cold-soaks, punch-downs, and basket pressing. Select yeast strains are curated for their ability to liberate and enhance varietal character and are employed to extract the fruit’s most pleasing attributes, highlight the true color of the berries, and build notable palate structure. Twenty months of French oak aging rounds the berry and plum fruit while playing up the toffee and turbinado sugar notes and enhancing the mouthfeel and finish.
